Watermelon cake: Perfect for Cup Match

Sweet surprise: Size does matter — the melon should be big and heavy

It’s a bit out of the ordinary in the way of desserts, but a watermelon cake is easy to make.

Yes, you read correctly. A watermelon cake.

And, unlike a traditional cake, it can be prepared in a flash if you follow the simple instructions below.

First, cut off the rind and then use paper towel and wipe off any excess juice that may have accumulated on the fruit.

Next, coat the watermelon skin with whipped cream — either homemade or store-bought will do.

Once all the sides are evenly layered, you may then add shredded coconut, halved almonds or any decoration of your choice. Add any fresh fruit to the top of the cake as a finishing touch.

Cut open the mysterious cake for a shock of brilliant colour and succulent fruit juices that catch many off guard.

Ingredients

1 large seedless watermelon

Fresh berries of your choice

Shredded coconut

Halved almonds

Directions

Cut off the watermelon rind

Pat the watermelon dry with a paper towel (so that the whipped cream can stick to the watermelon)

Coat the watermelon with whipped cream until completely covered

Coat with almonds, shredded coconut (your choice of edible decoration)

Top with your choice of fresh berries (preferably fruit that is in season)

Tips for picking the perfect watermelon for the ‘watermelon cake’:

Inspect the melon for defects such as any bruising, soft spots or cracks

Size does matter — the melon should be big and heavy

Tap the watermelon firmly with your hand to test the firmness. If the watermelon stays firm after several taps then it is ready to cut open.

The smell test begins at the stem of the melon. If you press lightly around the stem you should smell a scent of fragrance coming from the fruit, if you do then the melon is ripe.

Ingredients

2 1/2 cups of fresh, whole strawberries

1/3 cup of cold water

2 cups of Magic Shell (see ingredients and directions below)

Directions

Blend the strawberries and water together to make two cups of puréed strawberries

Pour into a Popsicle mould

Allow to freeze for at least four hours

Dip into magic shell

Ingredients for magic shell

1 cup of semi-sweet chocolate chips

2 tbsp refined coconut oil

Directions

Combine the ingredients in a microwave-safe bowl

Microwave at 15 second intervals, while stirring in between, until the chocolate has melted

Allow the chocolate to sit at room temperature before serving over your frozen treat

Store in an air tight container

What better way to combine all your favourite fruit into one dessert? Here’s a frozen dessert that will not only cool you down, but is low in calories and fun to eat.

Ingredients

9 tbsp water

2 tbsp sugar

5 oz kiwi, peeled

6 oz mango, peeled

6 oz fresh raspberries

Directions

Make a simple syrup by combining water and sugar in a small pot.

Boil for about four to five minutes on medium heat. Set aside.

Purée fruit separately in a blender and set aside in three bowls.

Divide the simple syrup between the fruit purées and mix in.

Equally fill 5 oz cups with the kiwi purée and place in the freezer for one hour.

Add mango purée and freeze 20 minutes, insert sticks and freeze at least two hours.

Add raspberry purée and freeze overnight.
