Bolero owners to branch out at Lemon Tree

The landmark Lemon Tree Café is set to bloom again under new ownership and a new name.

Jonny Roberts, the owner and chef at Hamilton restaurant Bolero, has teamed up with his restaurant manager Tyler Nearon to launch a new venture called “Bulli. Social”.

Mr Roberts said the recipe for the new restaurant was still under wraps.

But he added: “It’s definitely something new — but very few people know what it’s going to be.

“We are going to revitalise the Lemon Tree, that’s for sure. It’s going to be an eatery and that’s how we’re leaving it at the moment.

“We’ve got a lot of plans for it over the next couple of years and we believe it will be a success.”

The two decided to become business partners after hearing that the café, a popular meeting spot in Queen Street on the edge of Queen Elizabeth Park, was up for sale.

Mr Roberts said he had known Mr Nearon for five years, after he stopped by Bolero looking for a part-time job.

He added: “He’s been with us ever since and been promoted up to manager.”

Mr Nearon, 25, said: “I’ve always wanted to open a restaurant — the opportunity came and I love working with Jonny and couldn’t think of a better partner to go into business with.

“This is the next step up for me. I’m very excited — I have a lot of experience in nightclubs, which helps.”

The duo said that it was hoped to have the restaurant up and running by April, although unexpected problems during massive restructuring of the building might delay that until May.

Mr Roberts said: “We plan to revitalise the entire space. It’s a great spot with the park and everything.”

He added: “Bolero won’t change — we will still have all the same staff and I will probably spend most of my time there and Tyler will run this.”

Mr Nearon said: “I will definitely be hands on and I think people will be pleasantly surprised when they see what we have done.”

Mr Roberts said that the upcoming America’s Cup events would help boost business — but that the two were not relying on that.

He added: “I think it will help us a great deal, it’s a bonus, but in general, with our plans, it will be successful in its own right.”

The new restaurant and its bull’s head logo were unveiled in a post on social networking site Facebook.

The post said “Concept yet to be revealed……..it will be like nothing ever seen in Bermuda. It’s time to start upping the ante!

“The name ‘Bulli. Social’ may confuse some people. That’s OK. Bolero fans will get it once the concept is publicised.”
