Simple meals for Relaxation Day

If you’re struggling to think of the last time you had time to kick back and unwind, then you’re in luck ... today is Relaxation Day!

According to that helpful online database, known as the internet, August 15th is the one day of the year when you should make plans to do, well, nothing.

Pick out a book, lounge around in a hammock or take a bubble bath — the only requirement is that you should avoid stressful activities of any kind.

If dinner — and the thought of having to slave away over a stove and then clean up the mess that follows — gets you feeling a little tense, then you have two options: order a pizza or try one of these trouble free recipes below.

Fancy a delicious pasta dish with tomato, basil and spinach?

Although it sounds like such a dish might take a bit of time and effort, this one is actually extremely simple.

The best part is everything is made in one-pot, which means you can avoid washing the dishes until tomorrow.

One Pot Tomato Basil and Spinach Pasta

Ingredients:

12-16 ounces linguine pasta

1, 15 oz can diced tomatoes, undrained

1 medium onion, chopped

4 cloves garlic, minced

1/2 tsp red pepper flakes

1/2 tsp salt

ground black pepper

2 tsp dried oregano leaves

2 tsp dried basil

4 cups vegetable broth

2 Tbls extra virgin olive oil

A handful of spinach

Directions:

Place pasta, tomatoes, onion, garlic, and basil in a large stock pot. Pour in vegetable broth. Sprinkle the pepper flakes and oregano on top. Drizzle with olive oil. Add 1/2 tsp salt and some ground black pepper. Cover pot and bring to a boil. Reduce to a low simmer and cook for about 10 minutes, stirring occasionally. Add spinach, then cook for another 2-3 minutes. Cook until there is about one inch of liquid left in the bottom of the pot.

Or why not try this upgraded version of a grilled cheese sandwich, with bacon, basil and tomato? If you have these ingredients already stored away in the fridge or pantry, then this dish will only take ten minutes tops to make.

Bacon, Basil, and Tomato Grilled Cheese

Ingredients

2 slices of your favourite bread

Unsalted butter for the pan

2 tablespoons crumbled Gorgonzola cheese

3 strips of apple wood smoked bacon, cooked and crumbled

2 large basil leaves

About 4 slices of a small tomato

3 tablespoons grated mozzarella cheese

Directions:

Add a dab of butter to a small sauté pan over medium-high heat. Once it’s melted, swirl the pan around to ensure it’s well coated.

Next add one of the bread slices to the buttered pan. In the following order, add the ingredients to the bread: Gorgonzola, (caramelised onion, if you like), bacon, basil, tomatoes, and mozzarella.

Place the second slice of bread on top, then use a flat-bottomed, metal spatula to press down on the sandwich to adhere the ingredients together.

Flip the sandwich after a minute or two (when the bread is golden brown). The sandwich is ready when all the cheese is melted.

Oreo Fluff

Ingredients

1 small box White Chocolate instant pudding mix

2 cups milk

1 small tub Cool Whip

24 Oreos, crushed

2 cups mini marshmallows

Directions:

In a large bowl whisk together the pudding mix and milk for two minutes. Add Cool Whip, Oreos and marshmallows, stir well. Refrigerate until ready to serve.
