Try these healthful lunchtime suggestions from Government Nutrition Services: CHICKEN NUGGETS CHEZ GOOR 4 chicken breast halves, boned and skinned 2 tblsps. olive oil 2 cloves garlic, minced 1 tsp. black pepper 1 cup finely ground bread crumbs, made from 2 to 3 slices 1 tsp. cayenne pepper 21 tsps. honey 2 tblsps. Dijon mustard PREHEAT oven to 475 degrees Fahrenheit. Cut each chicken breast half into eight pieces. Mix oil, garlic and black pepper with chicken pieces and marinate about 30 minutes. Combine bread crumbs and cayenne and place on plate. Roll chicken pieces in bread crumbs and place on large cookie sheet in a single layer. Bake for about 15 minutes until browned and cooked through, broiling a few more minutes for extra browning. Combine honey and mustard to make dip for nuggets. Recipe serves four.

*** SPICY TUNA PITA SANDWICH 1 onion, chopped 3 cloves garlic, crushed 1 tblsp. olive oil 1 small stick cinnamon 1 whole clove 1 tsp. chili powder 1 tsp. oregano 4-oz. can tomato paste 1 cup water 2 3-oz. cans tuna, drained 2 large pita breads, halved 4 lettuce leaves, shredded PLACE onion and oil in glass dish. Microwave at full power for two to three minutes, stirring once. Add all spices and microwave at full power for one minute more. Combine tomato paste and hot water, bleanding well to make paste.

Add to onion mixture. Blend in tuna carefully and microwave at full power for two to three minutes. Remove cinnamon stick. Form pocket with each pita bread half and fill with mixture and lettuce. Makes four halves.

*** OATIES 11 cups flour 1 cup quick-cooking oats 1 tsp. cinnamon 1 cup baking soda 1 tsp. salt 3 egg whites 1 cup packed brown sugar 1 cup sugar 1 cup apple sauce 1 cup margarine, softened 1 tsp. vanilla HEAT oven to 325 degrees Fahrenheit. Spray cookie sheet with nonstick cooking spray. Mix flour, oats, cinnamon, baking soda and salt. Set aside. Beat egg whites in large bowl on medium speed until foamy. Add sugars, apple sauce, margarine and vanilla. Beat on medium speed until smooth. Add flour mixture.

Drop mixture by the tablespoonful two inches apart onto cookie sheet; flatten slightly. Bake for 12 to 15 minutes or until light brown. Cool slightly and remove from cookie sheet. Makes three dozen cookies.
