Raise a glass this New Year with these delicious recipes

On Friday, millions around the world will bid farewell to the 20th century and toast the new millennium with a glass of champagne.

As with everywhere else in the world, champagne sales are bubbling over expectation -- meaning that there may not be enough to savour throughout New Year's Eve.

If you lacked foresight and haven't squirrelled away enough bottles, here are a few recipes to help you stretch the champagne you have.

And for those who are designated drivers, there are a couple of tasty non-alcoholic drinks you can sample.

CHAMPAGNE COCKTAIL Champagne Cubes of sugar Angostura Bitters Lemon PLACE 1 cube of sugar in a champagne glass and saturate with Angostura Bitters. Fill with champagne. Add a twist of lemon peel.

*** GINA'S CHAMPAGNE CUP 3 bottle Brut (dry) Champagne 3 tablespoons Cognac 3 tablespoons Orange Liqueur 2 oranges (preferably Bermuda) 4 1 ounces black grapes 4 1 ounces white grapes CUT the unpeeled oranges into thin slices and place in punch bowl. Trim the stalks off the grapes and add these to the bowl. Pour in the brandy and liqueur. Cover the bowl and chill.

When ready to serve, add the chilled champagne, stir gently and serve at once.

*** CHAMPAGNE PUNCH 1 quart champagne 1 bottle vodka 6 ounces orange juice 5 small bottles club soda 4 ounces grenadine 6 ounces Roses lime juice MIX all the ingredients together. Pour over a block of ice and garnish with cherries.

*** BUCKS FIZZ 6 large oranges Orange juice Champagne SQUEEZE the juice of 6 large oranges into a jug. Pour a little of the fresh orange juice into each glass and top with champagne.

Serves 10.

*** PIMM'S 300 grammes/10 ounces strawberries 2 lemons Cucumber 2 Clementines Pimm's Cover Champagne, sparkling wine or lemonade.

TO prepare the flavourings, wash and halve 300 grammes (10 ounces) strawberries; thinly pare the zest from 2 lemons; thinly slice 5 centimetres (2 inches) cucumber (having discarded the seeds); segment 2 clementines (skin and pith remove).

Stir these into a jug containing 300 millilitres (1 pint) Pimm's Cover and leave for up to 1 hour before topping up with 900 millilitres (11 pints) chilled champagne, sparkling white wine or lemonade and borage ice cubes (Serves 10).

*** ALCOHOL-FREE DRINKS CRANBERRY COCKTAIL SQUEEZE the juice of 2 oranges and 1 lime. Tip the ice from an ice-cube tray into a plastic bag and crush with a rolling pin.

Put the ice in a jug and pour over the fruit juice and 2 tablespoons clear honey. Pour into glasses and top up with cranberry juice. Decorate the glasses with wedges of oranges or lime. Serves 6.

*** APRICOT FRUIT CUP MIX together equal quantities of apricot juice and sparkling grape juice. Pour this mixture into jugs filled with slices of fresh apricots, strawberries cut in half, a couple of sprigs of fresh mint and plenty of ice. Recipes from Millennium Party Book.
