CHICAGO DATE FOR MING: Top chef to show off Bermuda's cuisine

One of the Island's most respected chefs will be sharing his recipe for success with America's kings of the kitchen.

Next weekend, Fred Ming will be cooking up a storm in the `windy city' at the American Culinary Federation's National Convention.

Mr. Ming, who is a certified culinarian and judge by the American Culinary Federation, has been invited to the Chicago convention to perform a demonstration on Bermuda cuisine.

The Bermuda College lecturer will discuss the Island's heritage and how various ethnic groups emigrated to Bermuda bringing with them their various traditions and foods.

And he will discuss the various vegetables and fruits which grew on the Island when the first settlers arrived in Bermuda.

The presentation will also include a step-by-step guide to creating some of Mr. Ming's tasty masterpieces, like pan-fried rock fish with a fruit relish dressed on a bed of mustard greens pilaff and garnished with a plantain chip (see recipes).

And participants will also learn how to prepare grilled chicken breast with black rum sauce and loquat chutney accompanied with cassava cake and pumpkin duchess (see recipes).

However due to time constraints, Mr. Ming said his presentation could not include a demonstration on how to prepare what is widely considered Bermuda's best known dish, fish chowder.

But Mr. Ming said he will ensure that everyone at the Chicago convention gets to taste the delicious soup.

He will prepare Bermuda fish chowder, as well as Johnny bread and hashed shark, ahead of time in the hotel's kitchen and then offer samples to those in attendance.

After his appearance in the `windy city', Mr. Ming will begin preparing for a trip to Florida where the Caribbean's top chefs will try to tempt his taste buds.

Mr. Ming will be one of the judges for the Taste of the Caribbean Competition to be held in Miami on July 26.

Last Fall, Mr. Ming was to make his international debut as a judge at the prestigious competition but Hurricane Georges blew away any chance of Mr. Ming tasting glory at the Puerto Rico event.

The renowned culinary competition was cancelled due to the mass destruction inflicted in the Caribbean by the 120 mile per hour winds of Hurricane Georges.
