Ray's recipe is just mustard
land the Bermuda Chef of the Year title.
Mr. Henry saw off the challenge of 12 rivals with an original dish of mustard crusted pork chop with braised black rum cabbage and chili Southern Comfort sauce.
The cook-off against the clock was held at International Imports of Hamilton.
The charity event raised $11,500 for the Centre on Philanthropy. Past recipients of the event, which has raised more then $50,000 over the last seven years, include Meals on Wheels, Friends of the Hospice/Agape House, PALS, the Red Cross, and Age Concern.
In the final, Mr. Henry beat Michael Scott of the Fairmont Southampton Princess's Newport Room, Paul Duclos of Figaro's, and Craig Smith of Freddie's on the Square.
The Chef of the Year Cook-off is sponsored by Gosling Brothers, and the Supermart on Front Street.
