Great starts to the day

2 c. flour 1 c. sugar 3 tsp. baking powder 1 tsp. salt 1 c. butter or margarine, melted 1 egg 3 c. milk 1 c. canned fruit cocktail, drained well PUT the flour, sugar, baking powder, and the salt into a large mixing bowl and stir well. Add the melted margarine, milk, and fruit cocktail; stir it again, lightly and quickly, until it's just mixed.

Fill greased muffin pans about 2 of the way full and bake in a 400 degree F oven for about 25 minutes. This recipe makes 12 delicious muffins.

BANANA BRAN MUFFINS 3 eggs 2 1 c. buttermilk 1 c. unsweetened apple juice 1 c. sugar 1 c. honey 1 c. safflower or corn oil 1 medium size ripe banana, peeled and sliced 1 Tbsp. ground cinnamon 1 1 tsp. vanilla 3 c. bran cereal 1 c. raisins 2 1 c. all-purpose flour 1 Tbsp. baking soda 1. COMBINE eggs, 1 cup buttermilk, apple juice, sugar, honey, oil, banana, cinnamon, and vanilla in food processor. Whirl until most of banana is pureed.

2. Place cereal in large bowl. Add egg mixture, remaining 1 1 cups buttermilk, and raisins. Let stand 15 minutes.

3. Sift flour and baking soda into cereal mixture. Stir until flour is absorbed; do not over mix. Use batter at once, or refrigerate for up to 1 week.

4. Place paper liners in muffin-pan cups. Spoon batter into prepared muffin-pan cups , each about three quarters full.

5. Bake in preheated hot oven (400 degrees F) for 20 minutes or until tops spring back when lightly pressed with fingertip. Serve muffins warm. Or cool and refrigerate, or freeze up to 1 month.

Refrigerate the batter for up to 1 week. Bake at 400 degrees F for 20 minutes.

Makes 2 1 dozen at $1.80 per dozen.

Nutrient value per muffin: 137 calories, 4 g protein, 3 g fat, 27 g carbohydrate, 206 mg sodium, and 28 mg cholesterol. Exchanges: 1 starch/bread and 3 fruit.

SCONES 2 c. flour 3 c. butter 1 egg 2 tsp. baking powder 1 c. milk 1 c. sugar 1 c. raisins BLEND flour and butter in bowl with fork or fingers thoroughly. Add sugar, egg, milk, baking powder, and raisins (raisins are optional). Make balls in your hands; press flat with fingers or roll our and cut with cutter. Bake at 350 degrees F until light brown, 10 to 15 minutes.
