liquid state. The liquor can be cooled and moulded into blocks known as unsweetened baking chocolate. The liquor and blocks contain about 53 percent cocoa butter; Semi-sweet (bittersweet) Chocolate: It is also known as dark chocolate.

Sweeteners and cocoa butter are added to chocolate liquor. Standards dictate that it must contain at least 35 percent. It's fat content averages about 27 percent; Milk Chocolate: Cocoa butter, milk, sweeteners and flavourings are added to chocolate liquor. All US milk chocolate contain at least 10 percent chocolate liquor and 12 percent whole milk; Sweet Chocolate: Contains more sweeteners than semi-sweet chocolate and at least 15 percent chocolate liquor. The fat content is similar to semi-sweet chocolate; and White Chocolate: Contains cocoa butter but no non-fat cocoa solids. it contains sugar, cocoa butter, milk solids and flavouring.
