Yummy Peanut Butter Bears
2 cups quick-cooking rolled oats
2 cups all-purpose flour
1 tablespoon baking powder
1 cup granulated sugar
3/4 cup butter, softened
1/2 cup creamy peanut butter
1/2 cup packed brown sugar
1/2 cup egg substitute
1 teaspoon vanilla
3 tablespoons miniature chocolate chips
Stir together rolled oats, flour and baking powder; set aside.
Beat granulated sugar, butter, peanut butter and brown sugar in large mixer bowl with mixer at medium-high speed until creamed.
Add egg substitute and vanilla; beat until light and fluffy. Add rolled oat mixture. Beat on low speed until combined. Cover and refrigerate one to two hours or until easy to handle.
Preheat oven to 375 degrees Fahrenheit.
For each bear, shape one 1-inch ball for body and one 3/4-inch for the head. Place body and head together on baking sheet; flatten slightly. Make seven small balls for ears, arms, legs and mouth. Place on bear body and head. Place two chocolate chips on each head for eyes. Place one chocolate chip on each body for belly-button.
Back for nine to 11 minutes or until light brown. Cool one minute on cookie sheet. Remove to wire racks; cool completely.
Makes four dozen cookies.
