<Bz44>Try these delicious hurricane recipes
With power outages likely during and after a hurricane, it makes sense to have a stock of canned and non-perishable foodstuffs ready. But that doesn’t mean you have to eat badly. Here are some easy to cook recipes that will help tide you over until the lights come back on and the grocery stores re-open:
1 15 oz. can pineapple, chunks, drained
1 15 oz. can red kidney beans, drained
1 cup walnut halves, chopped
[1/3] cup salad dressing
1. Combined all the ingredients well and serve. As with most salads allow it to sit 10 minutes if using a vinaigrette.
2 cups canned ham, diced
1 15 oz. can tomatoes in puree, roughly chopped
1 onion, diced
2 cloves garlic, chopped
thyme
1. In a large saute pan or skillet, heat some oil. Fry the onion and garlic for a few minutes. Add the pepperoni and ham and continue to cook until lightly browned, 5 minutes.
2. Add the tomates in sauce, beans and sprigs of fresh thyme ([1/2] tsp dried), bring to a boil, reduce heat and simmer covered for 10 minutes. Adjust seasoning and serve.
>Hurricane Nicoise(4 servings)
1 12 ounce tuna fillet, drained
2 eggs, hard cooked, halved
1 four ounce can anchovies, drained
1 15 oz. can peas, drained
1 15 oz. can beets, drained, sliced
1 15 oz. can potatoes
1 15 oz. can asparagus, drained
[1/3] cup vinaigrette
Combine the peas and the potatoes with some of the vinaigrette, season. Layer the asparagus, beets, potatoes and egg on top. Flake the tuna over and drizzle with the remaining dressing. Lay the anchovy fillets over the salad and serve.
Quick Peas ‘n’ Rice*h"Standard">(4 servings)1.2 pound sausages, like pepperoni or canned bacon (optional)
[1/2] onion, diced
1 15 oz. can red kidney beans or black eye peas
1.2 cup rice
1 [1/2] cups water
fresh thyme
1 chili pepper
salt and pepper to taste
1. In a saucepan heat some oil and sauté the onion until soft. Add the meat and cook a few minutes longer.
2. Add the drained beans (or peas), rice, water and seasonings. Bring to a boil, reduce heat and simmer as for making rice.
3. Remove from heat after 20 minutes (for regular rice) and let stand 5 minutes. Fluff and adjust seasonings to te.
Johnny Bread<$>(4 servings) [1/2] cup flour
1 cup cornmeal
[1/4] cup milk
2 tablespoons sugar
1 egg
2 tablespoons Crisco
1. Combine dry ingredients, cut in the fat, then finish with the wet. Allow to sit 20 minutes or so. If the batter is too wet, add a little extra flour.
2. Use a skillet over medium high heat. Grease and sprinkle with cornmeal. Pat out the dough and flatten in the pan. Cook until browned (4 or 5 minutes). Flip and finish cooking.
