A trio of Justin's favourite recipes
2 small zucchinis 1 tsp butter (more or less) 2 tbsp water 1 shake of salt 1 shake of pepper 2 tsp grated Parmesan cheese (or to taste) CUT zucchini into rounds about 1 -inch thick. Heat pan to medium hot. Put zucchini, butter and water in pan. Shake in some salt and pepper. Stir and cook until it seems done. This will take about 5 minutes. Sprinkle with cheese. Makes two or three small servings.
Mini Cheesecakes 3 large packages cream cheese 3 eggs 3 cups sugar 1 tbsp vanilla 1 heaping tbsp flour 1 box vanilla wafers Fruit pie filling, such as cherry or blueberry MIX ingredients, except wafers and fruit pie filling, in blender. Pour into paper muffin liners on top of vanilla wafers. Bake at 350 degrees for 20 minutes. Top with pie filling. Makes 33 to 36 mini cheesecakes.
Crescent Chicken Roll-Ups 3 ounces cream cheese, softened 2 tbsp margarine, melted 2 cups cooked chicken, cut into 1-inch pieces 3 tsp salt 2 tbsp milk 1 tbsp chopped onion 8 unbaked crescent rolls 8 ounces sour cream 1 can cream of chicken soup MIX cream cheese, chicken, salt, pepper, milk and onions. Spoon mixture onto separated, unbaked crescent rolls. Roll each one up with mixture inside. Brush on margarine. Bake 20 to 25 minutes at 350 degrees.
For the sauce, mix sour cream and soup. Heat and spoon over top of roll-ups right before serving.
