Couple's dream comes true
Simmons have realised their dream of turning their business into an upmarket place to have dinner.
The restaurant, which is opposite the BF&M building, has gone decidedly upmarket but will still be serving its popular codfish and potatoes breakfast on Sundays and Bermudian fare morning, noon and night.
The business, which is owned by Mr. and Mrs. Simmons and Mr. Simmons' brother Wilmont, has been closed for 11 weeks for refurbishment.
The main dining room has been completely refurbished with pistachio coloured walls, frosted glass partitions, pale wood, funky palm trees, a raised platform at the rear and fashionable fittings and fixtures.
"I love it,'' said Mrs. Simmons. "We are so happy. It took at least a year of planning, and it is just what we wanted.'' A year ago the owners went to Bermudian company By Design Ltd. to work up a new look for the popular restaurant.
Mrs. Simmons said: "There were three things we knew we wanted -- the trees, the deck area and the bar, and we left the rest up to them.'' They had originally thought of a Florida, Key West theme, but decided that if it went wrong it could look tacky. So they went for a more modern Miami-kind of look instead.
"It is modern looking but still kind of tropical,'' she added.
The restaurant, which normally goes through 40 pounds of cod fish on a Sunday morning and sells out before noon, will be open seven days a week, but will close Sunday night.
"We are still very much a family restaurant. But it was hard that we weren't just a breakfast and lunch place -- that we were open for dinner as well. We bought the place in November, 1997 and it became well-known as Monty's. We have always wanted to do this, but didn't have the funds. It is a dream come true.'' The Full Monty's: Monty's Restaurant on Pitts Bay Road has had a complete facelift, taking the popular eatery up-market. Walter and Emma Simmons, who co-own and manage the restaurant, re-opened for business this week.
