management of Fresco's wine bar prepare to re-open the former Pink's on Front Street.

Fresco's co-owner Claudio Vigilante is convinced the combination of brilliant harbour views from every seat and quality fresh food supervised by Fresco's staff will guarantee success. The new venture, Fresco's Express, is due to open on May 22 as a delicatessen /restaurant with seating for 85 people.

Mr. Vigilante said Fresco's Express will combine traditional Bermuda cedar features with trendy modern design features.

Opening from 8 a.m. to 8 p.m., it will serve breakfasts, lunch and early evening meals. Diners can enjoy the views from the balcony in the Masters Building over Crisson's with a glass of wine or beer.

Mr. Vigilante said he hoped to pick up business from customers ordering take-outs by telephone, fax or email.

The delicatessen will be serving sandwiches with a European flavour on a variety of breads, including baguettes, granary rolls and focaccia rolls.

Traditional Bermudian fare will be represented in home-made fishcakes and fish chowder, or customers can choose from home-made waffles and crepes, or chicken roasted on a rotisserie.

Pink's opened up about twelve years ago and changed hands several times before closing two years ago.

Mr. Vigilante is certain a market exists on Front Street for this type of food and that old customers will welcome it back. Head chef and manager Antonio Esposito will be in charge of a staff of twelve, but the menu will be supervised by the head chef at Fresco's Oliver Ramos.

Mr. Vigilante said: "You are only as good as the people around you, so we are using the talent of Fresco's and transferring it here. That's why our head chief is overseeing the menu.
