Department: HOT CROSS BUNS 3 1 cup Flour 1 cup Margarine 2 1 cups Warm water 3 cup Dry milk Powder 1 1 cups Raisins 1 cup Sugar 2 1 tsp. Yeast 2 Eggs 1 1 tsp. Salt 1 tbsp. Allspice 3 1 tsp. Cinnamon METHOD OF PREPARATION 1. Mix flour, salt, milk powder and cinnamon together.
2. Add the fat and cut into dry ingredients, as in making pastry.
3. Add 1 cup of sugar to 1 cup of warm water and stir until dissolved. Add in yeast and stir until smooth.
4. Add eggs, sugar and raisins to the dry mixture.
5. Add yeast mixture.
6. Work the flour and liquid into a dough. Knead the dough until it is elastic and full of bubbles.
7. Place the dough into a greased container, brush the top of the dough with fat. Cover lightly, put in a warm place and let rise until doubled in bulk.
8. After proofing, punch down. Let rest for 20 minutes.
9. Divide the dough in to 2 pieces. Pull off small quantities of dough and shape into balls. Make a cross on the top with a knife.
10. Place on a greased bun pan about 1apart. Cover lightly and place in warm place until doubled in bulk.
11. Bake in 400F oven for approximately 15 minutes.
12. Remove buns from oven and brush the top with a light sugar and water bath.
Recipe yield: 25 buns ANNETTE'S CURRIED CHICKEN 6 1 lbs. Chicken 2 cups Diced Celery 1 lb. Sliced Carrots 7 1 tbsp. Curry powder 3 oz. Soy sauce 1 tbsp. Garlic powder 1 cube Chicken boullion 3 lb. Chopped onion 3 oz. Raisins 6 oz. Butter Pinch Thyme 3 3 cups Pineapple juice 1 tbsp. Season salt 1 cup Corn Starch 1 cup hot water METHOD OF PREPARATION 1. Wash and skin chicken.
2. Mix together onions, celery, thyme, curry powder, seasoning salt, garlic powder, butter and raisins.
3. Add dry mixture to chicken. Chill chicken overnight.
4. Cook in a deep skillet or pot until partially done.
5. Place chicken in casserole dish and add chicken boullion liquid, pineapple juice, soy sauce, and corn starch.
6. Bake in oven at 350F for approximately 1 hour.
Recipe yields: 25 servings CAROL'S WHOLE WHEAT ROLLS 4 oz. Butter 3 oz. Crisco 2 oz. Dry milk powder 1 1 cups Warm water 2 oz. Yeast 5 tsp. Salt 3 cup Sugar, white 3 eggs, beaten 9 cups All-purpose flour 4 cups Whole wheat flour METHOD OF PREPARATION 1. Place butter and dry milk powder in bowl. Add the fat and cut into dry ingredients as in making pastry.
2. Moisten the active dry yeast in about 3 of the warm water and stir until smooth.
3. Dissolve the sugar and salt in the remaining water.
