Chef Ming knows his onions

Chef Frederick Ming recently received his certification from the American Culinary Federation as a certified culinary educator, making him the only chef on the Island with the distinction.
To obtain the credential, Chef Ming had to demonstrate knowledge in the areas of sanitation, nutrition and personnel supervision in addition.
This achievement is just the latest feather in Chef Ming's cap -- earlier this year he qualified as a certified executive chef and culinary judge.
Chef Ming, who already has his teaching certificate in hospitality training in addition to a bevy of diplomas and certificates, is the chef lecturer at the Bermuda College.
And the well-known chef encouraged others in his field to seek ways to further enhance their skills in their profession.
"Bermuda is known as a quality destination, so chefs lets help ourselves and others in maintaining good standards by setting standards.'' Chef Ming also said that he wished the College and the apprentice training council would draft a plan which would provide certification programmed not just in the hospitality industry, but other professions.
Chef Ming said certification programmes were a win-win situation for both the employee and the employer.
"It could prevent burn-out and stagnation in employees. It would provide the employer with information regarding an employee's performance.
"Certification could also help unions when negotiating or upgrading salary levels.'' Masterchef: Frederick Ming has picked up another qualification.
