Greek restaurant to open
in the autumn.
The restaurant -- believed to be Bermuda's only Greek restaurant -- will be one division of Raven Management, a Devonshire-based company owned by Mr.
Derek Pedro and managed by his wife, Ms Janet Carew.
"I've been waiting for eight years for a Greek restaurant to open in Bermuda,'' said Ms Carew. "I couldn't understand why there wasn't one here.
So we decided to open Archimedes Restaurant.'' "Restaurants in Bermuda have put on Greek theme nights, but there is a need, particularly with Greek food, to be dedicated full-time,'' she said.
Archimedes will be based in Reid Street, at the site where Prego restaurant formerly operated. In mid-August, Raven Management signed a three-year lease on the premise.
"We have contacted suppliers -- we may use wholesalers or go direct to the supplier. But, we want to be sure we get quality and freshness,'' said Ms Carew.
A liquor licence is being applied for as Ms Carew plans to serve Greek wines, but not just Retsina, she added. "There are some wonderful wines from North Greece.'' The restaurant will follow the health food trend, serving lighter food: "We will be using lighter oils in the preparations. People are more aware of well prepared vegetable side servings and good salads. I think the fact pasta is not a heavy food explains the local popularity of Italian food,'' she said.
Raven Management, which moved to its Parson's Road location last September, employs a core staff of seven. Currently, its primary business is a renovation and maintenance business, that focuses on restoring and modernising traditional Bermuda homes.
An accounting and management consulting services division is run by Ms Carew, a chartered accountant who previously worked for Deloitte & Touche and an international shipping company in Bermuda.
