Oh No! Not another turkey sandwich?
27 you'll be looking for new ways to recycle the seemingly never-ending supply of ham and turkey.
So here are some suggestions to help you on your way: SCALLOPED POTATOES AND HAM This robust dish is a splendid way to use up leftover bits of cooked ham.
3 tbsps. butter or margarine 3 tbsps. all-purpose flour 1 tsp. salt 1 tsp. pepper 21 cups milk 6 cups thinly sliced potatoes (about 6 medium) 1 sml. onion, finely chopped (about 1 cup) 11 cups cubed fully cooked smoked ham 1 tbsp. butter or margarine HEAT oven to 350 degrees F. Grease 2-quart casserole. Heat 3 tablespoons butter in 11 -quart saucepan over low heat until melted. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Layer 1 of the potatoes, 1 of the onion and ham and 1 of the white sauce in casserole; repeat. Top with remaining potatoes and white sauce. Dot with 1 tablespoon butter. Cover and bake 30 minutes. Uncover and bake 60 to 70 minutes or until potatoes are tender. Let stand 5 to 10 minutes before serving. Serves 6.
Microwave Directions: Place 3 tablespoons butter, the flour, salt and pepper in 4-cup microwavable measure. Microwave on high 2 minutes, stirring after 1 minute, until very bubbly. Stir in milk gradually. Microwave 5 to 6 minutes, stirring with fork or wire whisk every 2 minutes until thickened.
Layer as directed in 3-quart casserole. Omit 1 tablespoon butter. Cover tightly and microwave on medium-high (70%) 21 to 25 minutes, stirring every 6 minutes, until potatoes are tender. Let stand 5 minutes.
HAM LOAF AND RED CURRANT SAUCE 1 lb. ground ham 3 lb. ground pork 1 cup soft bread crumbs 1 cup chopped onion 1 egg 1 cup milk Red Currant Sauce (see recipe below) HEAT oven to 350 degrees F. Mix all ingredients except currant sauce. Shape mixture into loaf in rectangular pan, 13 x 9 x 2 inches. Bake, uncovered, 1 1 hours or until done.
Prepare Red Currant Sauce.
Remove ham loaf from pan; spoon sauce over ham loaf. Serve with any remaining sauce. Serves 8.
CROQUE MONSIEUR 1 cup butter, clarified 8 slices firm sandwich bread 4 thin slices baked ham 4 thin slices roasted turkey breast 4 slices mozzarella cheese Freshly ground black pepper to taste Pinch allspice LIGHTLY butter one side of each slide of bread. Place a slice of ham, one of turkey and one of mozzarella on the buttered side of 4 slices of bread. Season with pepper and allspice. Top with remaining bread, buttered side down. Heat enough of the remaining butter to cover the bottom of a heavy, heated skillet.
Saute sandwiches slowly in it, turn and brown second side, making sure cheese has melted. Cut into squares, and serve as an appetiser with drinks to those who only want soup and a sandwich. Yield: 8 appetisers or 4 main-course servings.
