Three chefs run the show in the kitchen.

Although youthful, they can boast years of hard-earned international experience in meeting customers' needs.

And they have become skilled at the art of Italian cooking.

Twenty-six-year-old Herr. Uwe Lipfert is the head chef -- a title he does not feel entirely comfortable with.

"We are really a team, and work together extremely well. We rely on each other.'' Despite his years, Herr. Lipfert has already clocked up 10 years as a chef.

The German began his career at just 17, learning his skills in his homeland.

"Italian food is extremely popular in Germany, just as in Bermuda,'' he points out.

Herr. Lipfert came to the Island five years ago. Before joining Pasta Pasta he worked at Southampton Princess.

His expertise enables him to conjure up any pasta dish for the customer, even if it is not on the menu.

Helping Herr. Lipfert are Mr. Syras Bharucha and Mr. Naveen Chitravanshi, both from India.

Their career paths are strikingly similar.

Mr. Bharucha has notched up seven years experience, starting in the Sheraton hotel group.

The 27-year-old then spent three years with the Royal Caribbean Cruise Line, satisfying the palates of cruise ship passengers.

Hailing from Bombay, he has been in Bermuda a month and a half.

His 28-year-old colleague Mr. Chitravanshi, who comes from Delhi, has more than nine years experience behind him.

After working for the Hyatt Regency, he also spent a spell on an RCCL cruise ship.

Of course, a restaurant cannot survive on kitchen craft alone.

Someone needs to handle the most important part of a business -- dealing with customers.

Twenty-eight-year-old Miss Christa DeSilva is the full-time hostess and Italian owner Mr. Fosco Nannini's assistant.

"I deal with the customers, and order stock. I am also in charge of the part-time staff,'' she explains.

The part-timers who serve customers include Miss Adria Hollis, Mrs. Jane Whayman, and Miss Charlotte Bosch de Noya.

Last but not least there is Mario.

Anyone who enters Pasta Pasta can't help but be impressed by how clean it is.

And much of the credit should go to Mario.

"He takes care of the dishes and cleans the whole building every day and night, seven days a week,'' says Miss DeSilva.

Testimony to his efforts are the compliments regularly paid to Pasta Pasta's cleanliness by customers.

"They often say how impressed they are,'' adds Miss DeSilva. PHOTO RINGING UP -- Miss Aria Hollis has her finger on the pulse -- as well as the cash register. She is one of a three-strong team of part-timers who help out at Pasta Pasta.
