A perfect Ten with plenty of pork and pinot

What do you do when you an overseas meat distributor gives you one of the most rare and prized kinds of pork on the market? You host a dinner event and celebrate, of course.Cafe Ten — located on Dundonald Street, Hamilton — will host Pigs and Pinot on Wednesday at 7pm.Staff were inspired after the restaurant became one of the few with access to pure-bred Berkshire pigs. Considered to be Britain's oldest pig breed, the animals were originally bred around the market towns within the English county of Berkshire.Manager Mika Coddington said they were lucky to get the opportunity to work with the extremely rich meat.She said: “We work very closely with our meat suppliers Debragga & Spitler in New York. They chose select restaurants for these special pigs — Ten was one of them.“The pigs [are fed] acorns for 100 days and take on the acorn flavour and are delicious. They have a tremendous fat cap, wonderful for Lardo or left on the loin muscle.“They are only available for 21 days [and] the farmer only feeds 100 animals per year.”Chef Mike Knight will create five “outstanding” courses; Burrows & Lightbourn will match each dish with five different Pinot Noirs.The pork would be a “fantastic” match for the sweet-berry, spice and earth-toned qualities of Pinot Noir, Ms Coddington said.“The moderate degrees of tannin of Pinot Noir are very soft and tender making this a sleek, smooth, easy-drinking red wine which will pair perfectly with the chef’s creations,” she added.Pigs and Pinot, $75 per person, is available by reservation, 295-0857.
