Thai-spiced meatballs seal victory

Daamian Simmons of the Royal Bermuda Yacht Club is the winner of round two of this year’s City Food Festival’s Chef Competition.

Royal Bermuda Yacht Club chef Daamian Simmons has won the second round of the City Food Festival Chef Competition.

His winning entries included Thai-spiced chicken meatballs with lemon grass, coconut cream and pistachio and frozen grape, along with a truffle chicken and salami roulade on a Parmesan tomato chip with roasted bell paper coulis and naan bread.

Chef Simmons beat out competition from amateur chef Nicky Gurret, Jeffrey Olmedo of Rosa’s and the winner of last year’s competition Boyet Katigbak. The chef’s were given the challenge of preparing three canapés including one vegan option from a box of ingredients.

Richard Reno was named the winner of round one on Monday and the two finalists will go head to head for the top spot. The finals are due to be held as part of the Street Festival on Saturday, April 9, on Front Street between Burnaby and Parliament Street from 2pm to 10pm.
