Three of four ‘Rising Chef of the Year’ finalists announced

Three chefs have been chosen to take part in the ‘Bermuda Rising Chef of the Year’ competition on Friday.Chefs Carmin Viola, Adam de la Cruz and Trevor Kliaman — all from the Fairmont Southampton’s restaurants — will be going on to vie for the coveted title at the Bermuda Hospitality Institute’s fundraiser.Last night a fourth person was also set to be chosen to battle for the final round at International Imports; their name will be released at another time.Mr Viola, a Newport Gastro Pub Chef, won the first round of the competition semi-finals last Thursday with his trio of scallops.While Bacci Chef Adam de la Cruz was given the top honour by the judges for his recipe for chicken roulade with eggplant lasagne, eggplant vinaigrette, with tomato basil froth and chicken farce.On that night, Chef Bipin Sharma of Bone Fish Grill in Dockyard snagged the Audience Favourite Award.Round three of the competition took place on Monday night, with Fairmont Southampton Chef Trevor Kliaman named as the evening’s winner.He created an herb and goat cheese crusted lamb rib-eye with a jalapeño lamb lollipop and sweet potato ratatouille.Chef Jonathan Rivard of Bolero earned the title of Audience Favourite.BHI CEO Karla Lacey said the sold out event has proven to be a success.“We continue to be impressed with the level of creativity, skill and professionalism of these up and coming chefs.
