Spice up your tent-side meals while camping
I stopped camping when I was a teenager — partly because I am deathly afraid of cockroaches and prone to getting about a dozen mosquito bites for each hour that I spend outside.But the other reason was because a staple diet of hot dogs and S’mores for days on end wasn’t all that appealing to me as I got older.The truth is camping these days has become a lot more exciting than when I was growing up.A quick browse around the internet reveals that it just takes a little creativity and simple ingredients to take your camp fire meal from ordinary to outstanding.Considering that camping season is already among us, The Royal Gazette’s Lifestyle section is encouraging our readers to look outside the box when it comes to a camp menu this summer.Here are some ideas to spice up your tent-side meals:Breakfast: ‘Sausage and Roasted Red Pepper Sandwich’Ingredients3 red bell pepper6 tbsp chopped green onion3 tbsp of rice vinegar½ tsp of sugar6 pre-cooked sausages of your choice6 whole wheat hamburger buns6 tbsp of Dijon mustardRoast the pepper, skin side down, on the grill until slightly charred. Chop the pepper into small pieces and mix with onion greens, vinegar and sugar. Let marinate while preparing sausages.Grill or roast sausages over a campfire on a long fork or stick, until both sides are grilled to your liking.Toast the buns, if desired, then slice the sausages and put them on the bread. Top each with half of the pepper and onion mixture, then add the mustard.Lunch: Grilled Pizzas1 package of English muffins1 jar of pizza sauce1 bag of shredded cheeseYour favourite pizza toppingsSpread pizza sauce on English muffin halves. Sprinkle cheese on top of each slice and add toppings as desired.Put foil down on grill and cook over warm fire, until cheese is golden brown.Dinner: Tacos in a bagSmall bags Dorito chips, one per camper½ cup cooked and Taco-seasoned hamburger per campershredded/chopped lettuceshredded cheddar or Mexican-mix cheesediced onionsdiced tomatoesmild or medium salsa or taco sauceplastic forks or spoonsWarm the meat in a skillet over the grill until warm, or it can be served cold if preferred. Then open chip bags, add in ½ cup hamburger mix, cheese and whatever other ingredients your guests want, into their bag of chips.Dessert: Grilled Waffle Treats(Serves four)8 frozen waffles1 cup miniature marshmallows1 cup semisweet chocolate chips, white chocolate chips or butterscotch chips.Place a waffle on a greased piece of heavy-duty foil. Sprinkle with desired amount of marshmallows and chocolate chips; top with another waffle.Fold foil around sandwich and seal tightly, then place on the grill over a medium heat for eight to ten minutes or until chocolate is melted, turning once.Open foil carefully to allow steam to escape.
