Monique Hunt often struggled to find the time to create wholesome meals for her family due to work demands.After the birth of her second daughter last summer, she became determined to spend more time at home Food By Design was her solution to a more flexible career.The meal delivery service is aimed at providing working men and women with tasty and healthy, low-calorie meals and snacks to get them through their hectic week.“There were a bunch of reasons why the idea stuck, one being when I was working I was extremely busy and trying my best to eat healthy and have a better lifestyle in general.“I found that the hardest part of losing weight for myself personally is the diet. The exercise comes naturally for me, but it’s getting the diet right and having the time to prepare meals that was a struggle.”Food By Design clients are e-mailed a meal plan at the start of each work week which they can then ‘design’ to accommodate special diets for people who have food allergies or people who are diabetic or vegetarian.The meals are delivered to their workplace or home at the start of each work day. Callie Smith helps Ms Hunt with meal preparation and business operations.Frittatas, with leeks, spinach and Parmesan cheese, are one of her speciality items. The home cook said she typically seasons the dish with a non-MSG salt and pepper, before baking it in the oven.Low in calories, the frittatas contain healthy greens from the spinach and B vitamin folate from the leeks.She also uses an egg substitute which helps to cut down and reduce the amount of cholesterol.Dinner options include chicken Parmesan with zucchini spaghetti. Ms Hunt said the meat is prepared on a griddle after it is dipped in egg and lightly coated in parsley. The finely grated zucchini, which ends up having a similar texture to pasta, is cooked in a tomato sauce.People with a sweet tooth can indulge in healthy treats, like Greek yoghurt and fresh fruit or a home-made trail mix with walnuts, almonds, unsalted peanuts, dates, dried cranberries and a few chocolate chip pieces.She said the menu options will change on a regular basis to avoid clients from getting bored. She also encourages people to give feedback on meals they enjoy so she can feature them on the menu more often.Ms Hunt said she was excited about the new business. Although not a nutritionist, she said she was passionate about providing people with meals that utilised fresh produce, herbs and spices and were low-calorie and low-fat.To compliment the business, she has begun a Personal Training course at the Bermuda College to be completed in April. She is also starting to grow her own organic produce after completing a four-week course called “Grow Biointensive” with Frances Eddy.Ms Hunt and Ms Smith will prepare and package the meals several times a week in Kathy’s in the Emporium Building. At the moment they can accommodate 20 to 30 clients, but hope to increase staff as demand grows.A package of three meals per day, Monday through Friday, costs $100.
