Keep your heart healthy with some tasty celery soup
As you read this I will be recovering from having three wisdom teeth wrenched out of my head. No doubt I have woken up looking like a chipmunk and have submerged my face in a bucket of ice. The good news is, by the time this is in print, it will also be over. I have done fantastically well at avoiding this particular dental drama for over a decade. How very British of me. It's also understandable, given that the other tooth was extracted without a general anaesthetic, came out in pieces and involved some moments of desperately black comedy, including the dentist kneeling on my chest for leverage.Fortunately, Supergranny has landed and is ready to assist with the recovery process. Her number one job is to help prevent the girls from climbing on my head. This is easier said than done, given that it's their favourite game. In the meantime, however, she is hard at work waving her wand over all things domestic. I can't tell you how miraculous it is to have something washed, ironed and hanging back in my wardrobe within a nanosecond of it landing in the laundry. Did Walt Disney misplace Mary Poppins? If they did, then we have found her, but they can absolutely not have her back.Given that I will be on a liquid diet for a few days, Supergranny also has soup on her to do list. First up is this fantastic celery recipe … which is not something I ever imagined writing. Please remember that despite my profession, I also have an aversion to tofu and an obsession with Percy Pigs (if you don't know what they are it is probably best it stays that way). So if I don't think something tastes delicious, I won't pretend it does. Yet this celery soup is an old favourite of mine and gets a surprising nod of approval every time.With heart month coming up in February, it's also worth noting that this is about as heart-healthy as you can get. Celery contains something called 3-n-butyl phthalide, which has been shown to lower blood pressure. It also stimulates the production of bile acids, which actively helps to lower total cholesterol. It's just one example of how food can medicinally work in your favour. Warm up with this over the weekend!Heart Healthy Celery SoupMakes 6 generous servingsIngredients:1 large onion, finely chopped3 large leeks, peeled, trimmed and chopped2 cloves garlic, crushed16 stems celery (organic if possible), trimmed and chopped2 medium potatoes, peeled and chopped into 2cm cubes (approx!)1 litre low sodium vegetable or chicken stock½ heaped tsp ground nutmeg (fresh or pre-ground)½ tsp ground ginger2 tbsp olive oilPinch of black pepperMethod:1. When preparing the celery, make sure that you remove any of the tough outer strings, they should peel off easily.2. Warm the olive oil and 1 tbsp water in a large saucepan over a medium heat. Add the chopped onion, leeks, garlic and celery. Stir and reduce the heat to low. Cover and allow the vegetables to “sweat” for three minutes.3. Add the potatoes and vegetable stock, bring to the boil.4. Reduce the heat. Stir in the nutmeg, ginger and black pepper. Cover and leave to simmer for 20 minutes.5. After 20 minutes, or when the vegetables (especially the potatoes) are cooked through, take off the heat and leave to cool.6. When cooler, you can blend the soup. I prefer this soup totally smooth, but it is up to you! You may need to blend this in batches.7. Reheat gently but don't allow to boil, this spoils the consistency.8.
