Here are a few simple ones to try.Maple Orange– Glazed CarrotsIngredients1lb carrots, peeled and sliced into ¼-inch thick rounds2 tbs unsalted butter½ tsp salt¼ c maple syrup⅓ c orange juice½ tsp orange zestPinch cinnamonIn a large, wide sauté pan, heat the butter on medium heat until melted. Add the carrots and toss to coat. Cook for three to four minutes, then add the maple syrup. Cook for a minute more, then add the orange juice. Cover the pan and cook for three additional minutes.Next, uncover the pan and increase the heat to medium high. Stir the carrots occasionally, and cook until almost all of the liquid has evaporated. Remove from heat. Lastly, sprinkle cinnamon over the carrots, and stir in the orange zest. Cooking time: 20 minutes.Scalloped Turnips RecipeIngredients4 tbs butter½ c thinly sliced onions4 c peeled, sliced turnips2 tbs flour1 tsp saltFreshly ground black pepper1 c milk½ c creamPreheat oven to 350°F. Butter a one-quart casserole. Melt one tbs butter and lightly sauté onions until just wilted.Layer a third of the sliced turnips in the casserole dish; top with a third of the onion; sprinkle with two tsp flour, ⅓ tsp salt, and one grind of pepper; pat with dollops from one tbs butter. Repeat this layering twice.Then, mix milk and cream together and pour over the turnips.Cover and bake in a 350°F oven for 30 minutes, then remove cover and bake for another 30 to 45 minutes, or until tender and bubbly.
