Local beers bring out the flavour of fine food

Set aside that expensive glass of Burgundy.

Because now you can have a pint of beer to enhance the flavour of dishes like roast onion crostini seasoned with sun dried tomato oil or garlic herb-crusted Bermuda fish with grilled vegetables and banana salsa.

In fact, beer is the beverage that chefs are starting to develop quite delicious full course meals around.

Marriott's Castle Harbour Resort is featuring a special menu designed to complement Bermuda's own locally-brewed beers.

Every Monday night at their Golf Club Grill they offer a four-course meal, and with each course a different glass of beer from Bermuda Triangle Brewing's selection.

Vice president of Bermuda Triangle Brewing Philip Mason said: "Pairing foods with beer is a very popular concept for many restaurants in the US and has earned a devoted following of supporters from the micro-brewery and brew-pub industry.

"The growing popularity of speciality beers produced by small breweries has expanded the choice amongst connoisseurs of full-flavoured beers.'' Mr. Mason added: "The pairing of beer with various dishes throughout a single sitting is much like choosing several fine wines to complement, contrast or create a third new flavour for the palate.'' He said that Jonathan Langsam, who is the chef at Marriott's Golf Club Grill and Pub, first presented the idea to the local brewery and thought it would be a "great way to present something uniquely Bermudian and fun for their guests and at the same time be supportive of a local business here on the Island.

"Having recently spent four months at the Maui Marriott Hotel and Resort in Hawaii and witnessed first hand the popularity of beer pairing with special food groupings, he was excited about introducing the concept here in Bermuda,'' Mr. Mason said.

"We first sampled all four of the distinctly different Bermudian beers and then set about creating dishes to suit each of the distinct flavours,'' Mr.

Langsam said.

He added: "The menu starts with the lightest of the four beers, the Spinnaker, and progresses through to the strong, more robust Hammerhead Stout -- much like you would for a wine tasting.

"Lighter beers were paired with more delicately flavoured dishes, and the darker beers were more suited for complex, rich-flavoured foods.'' Mr. Langsam continued: "One dish -- the roast onion crostini -- is crisp and light, the onions make the dish a little sweet. This suits the Spinnaker beer perfectly. The sweetness of the crostini contrasts and enhances the beer's flavour instead of overpowering it.

"For the Hammerhead, which is a medium bodied stout with nut and coffee overtones, we chose a short rib with mashed potatoes.

"We braised the ribs with the Hammerhead and added black bean puree with fresh herbs. To finish we marinated the ribs in a Thai black bean sauce and grilled. The result is a sweetish yet robust caramelised flavour which complements the stout nicely.'' Mr. Mason added that the company was excited about the idea of showcasing the local beers to Marriott's guests with this special menu.

"Marriott's Castle Harbour has been supportive of the Bermuda beers from the very beginning, almost two years ago now,'' Mr. Mason said.

He also said: "We have found the Marriott management and staff to be very receptive to any new, innovative way to enhance the Bermuda experience for their guests.

"The pairing of our speciality beers with unique dishes is colourful, fun, upbeat and great value for money. We were only too happy to help in any way we could.'' Bermuda Triangle Brewing puts on a free taste demonstration of its four beers every Sunday at the Golf Club Grill between 5 p.m. and 6 p.m. to introduce Marriott's guests and locals to the beer and to the special Monday night menu.

The Golf Club Grill also offers specials on unique pub foods designed around the Bermuda beers in their more informal sports bar setting.

You can munch on items like Spinnaker soft fresh cheese, giant pretzels with Full Moon mustard and grilled cajun sausage with Wilde Hogge beans and cabbage.

SPINNAKER -- This roast onion crostini with sun dried tomato oil complements Bermuda Triangle Brewing's Spinnaker beer as it is crisp and light.

FULL MOON -- This curried lobster salad with avocado, tomato and crisp greens complements Bermuda Triangle Brewing's Full Moon Pale Ale.

WILDE HOGGE -- Bermuda Triangle Brewing's Wilde Hogge Amber Ale goes nicely with this garlic herb crusted Bermuda fish dish served with grilled vegetables and banana salsa.

HAMMERHEAD STOUT -- This darker beer is best served with a richly flavoured dish -- in this case, it's hammerhead braised short ribs with mashed potatoes and black bean puree.
