How Bermudians `wet the whistle'

discovering all week. And part of that hospitality is "wetting the whistle'' with libations which are not part of the ocean racer's diet.

But once the sea legs get that soft green turf beneath their soles, life changes -- sometimes too dramatically, for Bermuda's drinks can pack a one-two punch without proper "training.'' They might do a lot for aspirin sales, but oh de pain, as we say here. So, with a warning to drink slowly and drive carefully, here's a guide to great partying for all but the designated navigator -- or driver, as we say ashore! The recipes are all taken from Bermuda's Favourite Drinks, which is available in local stores.

*** DARK 'N' STORMY POUR 11 oz. of black seal rum in an 8 oz. glass with ice. Top up with ginger beer.

*** MIKE'S BLACK SEAL SPECIAL 2 oz. 151% (overproof) black rum 2 oz. Bermuda honey 1 tsp. instant coffee 4 oz. boiling water COMBINE all ingredients and serve immediately in brandy snifters with a small twist of lemon peel.

*** GOVERNMENT HOUSE FRUIT PUNCH Pour into a one-gallon bottle: 1 can frozen orance juice concentrate 1 6-oz. can grapefruit juice 1 46-oz. can pineapple juice approx. 1 tbsp. Angostura bitters Grenadine syrup (to taste and colour. The more the syrup the sweeter the taste and the deeper the colour) Fill rest of the bottle up with lemon soda or ginger ale. Chill and serve over ice.

*** GOLD RUSH 1 oz. Bermuda Gold liqueur 1 oz. gold rum Pineapple juice POUR ALL ingredients into a tall glass over cracked ice. Garnish with cherry and fresh orange slice.

*** PORCH CLIMBER 1 oz. rum 1 apricot brandy 1 oz cherry brandy Lemon juice SHAKE all ingredients in cocktail shaker and strain into cocktail glass.

*** TROPICAL STORM 1 oz. freshly squeezed orange juice 1 oz. pineapple juice 1 oz. lemon juice 1 oz. black seal rum 1 oz. malibu 1 oz. galliano 1 oz. Bermuda Gold 1 oz. Grenadine POUR all ingredients over ice in a bar mixing glass. Shake well. Use strainer and pour into a tall Collins glass. Decorate with a slice of orange and a maraschino cherry with stem. Add tall straw.
